This post is longgggg over due because this salad is my go to now! Lets start with the base. This salad is based with a chopped raw kale and scoop of quinoa. The combination provided a hearty and fiber filled lunch that will keep you full for the rest of the day. I topped it with a smokey and salt free seasoned wild caught salmon to get a little protein during my lunch. Long story short, this lunch was BOMB and a huge hit with my meal prep and meal plan clients. Direct quote from my meal plan client, "I am obsessed with the southwest salmon salad and my mouth was on fire!" < side note, be careful with how much hot sauce you add in the dressing!
